CHARLIE: "Healing Diets allowed me to realize a few things: First, I discovered I have made many positive changes in my life concerning my diet that are affecting my overall well being as well as that of the planet. I also discovered that there are many more simple and shockingly obvious things yet to be done.
I will no longer lend any legitimacy to many of the myths surrounding meat consumption in our culture. It was fascinating and exciting to learn that we can get all the protein we need and probably more from a plant based diet. It is amazing to me how few people realize how unnecessary and definitely harmful animal foods are to our health and the Earth and obviously to the animals. I look forward to sharing this knowledge with people and to applying it to my life.
I think the most immediate impact of the knowledge gained here for me will be eliminating dairy products from my diet. They don't make me feel great and now I know they have adverse health effects as well, plus I have experienced the deliciousness and vitality of seed and nut milks I now believe can wholly replace animal diary products.
I enjoyed the information regarding new foods – how to prepare them and their many health benefits. I did not realize before this course the amount of nutrients and life force that leave foods when they are cooked! It makes me glad that I have always loved and craved salads and it excites me to greatly expand my raw food repertoire!
The information about cleansing and fasting and colon cleansing was eye-opening. I now know that the mucus in my sinuses comes directly from my digestive system (as do many diseases). It really is astonishing the extent wo which we can heal our bodies, minds, spirits and Mother Earth simply by becoming mindful of what we eat! Thanks! FARIDA: I too love teaching this class, total fun in the kitchen. Each day we began with a different seed and nut milk flavored with fruit and spices, followed by transitional meals I love to call Raw Toss, a fine way to toss sprouts, dandelion, arugala and other wonderful greens and tasty vegetables in a quinoa shitake grain, a potatato, onion and carrot steamed mix or a finely chopped cabbage base with sparkling spices and herbs – the best way to transition into a new way of eating, living and being!! Then there are the absolutely fabulous salads containing a wide world beyond lettuce, tomato, cucumber, and of course energy soup. We all felt clearer and brighter and the laughter and joy and humor around our meal table was a delight to share with such bright young souls seeking truth and their highest potential!
